Hey y'all... 

So this was kind of spur of the moment. I was figuring out how to possibly film a cooking video on my own and ended up messing up the sauce I made for this dish because I was so distracted by the camera. It was still delicious without the sauce, but you can use any sauce you like :) I will make my hearty spaghetti sauce recipe soon. Anyways, spaghetti squash is one of my favourite things to cook with as there's so many variations. 

 

Poke around 15-20 holes depending on the size. This is one of the smallest ones I've seen which is why I cooked it less than usual, for 40 minutes total. For more regular/larger sized squashes I usually cook an hour total. Always flip halfway.

Chop up your vegetables of choice. I had garlic, onion, red pepper, mushrooms, tomato, spinach, arugula. 

Salt & Pepper to taste.
